Blood Orange Bircher Muesli

Creamy and dreamy, packed with fiber and protein and with just a whisper of sweetness, this Bircher Muesli (aka overnight oats) with a splash of Rebellious Infusions is the perfect cozy breakfast to power you through your day. A quick mix in the evening and rest in the fridge, the result is a luxuriously soft, chewy, and flavorful no-cook morning bowl that is great to make ahead for a crowd or just you.

Blood Orange Bircher Muesli
2–3 servings

Ingredients
1 cup (100 grams) old-fashioned rolled oats*
2 tbsp (20g) chia seeds
2 tbsp (20g) hemp seeds
¼ tsp (1g) sea salt
pinch of ground cardamom
2 liquid packets Rebellious Infusions—Blood Orange
1 cup (240g) Greek yogurt**
½ cup (120g) oat milk
½ cup (120g) blood orange juice (from about 3–4 blood oranges)
zest of 1 blood orange
½ tsp (2g) vanilla extract
1 tbsp (20g) raw honey
1 blood orange, sliced
2 tbsp (14g) toasted pistachios, chopped
2 tbsp (8g) toasted unsweetened coconut
2 tbsp (20g) pomegranate seeds

Directions
In a medium bowl, mix together oats, chia, hemp, and cardamom. Add in Rebellious Infusions, yogurt, milk, blood orange juice, vanilla, and honey. Mix until combined. Transfer to bowls, glass jars, or containers and place in the refrigerator overnight (or at least 4 hours) to fully soak.

When ready to eat, give the oats a stir and then top with blood orange slices, pistachios, coconut, and pomegranate seeds, or other toppings, as desired. Enjoy!

No heating necessary, as Bircher Muesli is typically served chilled. If you do prefer your oats warm in the winter (like we do), feel free to microwave for a few seconds or heat over the stove (though you may need to add a little liquid).



*To make gluten-free, simply use certified gluten-free oats (we used Bob’s Red Mill Old-Fashioned Oats).
**To make dairy-free, simply use a thicker style plant-based yogurt, like coconut.
